And overseeing the award winning food in the Dubai restaurant is head chef Giacomo Emiciucci. The style of the cuisine is very simple and elegant. We want to bring in every single dish, Italianity, authenticity and great ingredients. We are really focused on sourcing the best ingredients and give them the work that they deserve to bring the best of the flavor in every single dish. Spaghetti Pomodoro is one of the signature dishes that we have created along with Nicaromito, and it's present in every single restaurant in all the boulevard hotels resorts in the world. The pasta that we have selected is the spaghetto, the normal spaghetto which is a very rustic touch. It's thinner than the normal spaghettone because we want to make sure that it respects a lot the simplicity of the sauce. What is going to be coated with and the bite is absolutely tremendous. It's absolutely incredible. Talking about simplicity, talking about Italian pasta. So we are really proud to serve it. So the spaghetto pomodoro is very simple. It's cooked in tomato water. We will source the best Sa Marzano tomato when they are at the peak of the season. We have an amazing producer which will pickle them and will mature them for a while. After that, we purchase them and they go under a process of desiccations and maturations. And then finally we obtain a very silky and flavorful paste. So the tomato water, we will source again, the best tomatoes when they are in season, and we will literally squeeze them to obtain all the. All the growing. The vegetation's water that is inside of each tomato, which is a bit more acidic. And with that acidity where we cook the pasta with, then it's balanced with the sweetness of the tomato paste itself.
While we are heating up the tomato water, we will pick some fresh basil, which we want to make sure we will flavor a little bit. The water like a very light infusion. And then we are going to remove it. The next step after boiling the pasta in the water is finish the cooking into the tomato water itself. So now it's about time to stir in the pasta and making sure all the starches of the pasta are going out. And then it's going to combine into a beautiful sauce. So we'll do that for a couple of minutes until we reach the nice al dente cooking. And then we'll finish it off with our homemade tomato paste and olive oil. So now we added our tomato paste. We're just gonna cook it very quickly to ensure it's going to be coated at a perfection. And we don't want to overcook the tomatoes flavors of the paste, which are already well nice and balanced. So the more we keep them on the fire, the more the flavor will change. Now it's time to pick up some fresh basil. And we can do a very fine julienne out of it, very fresh at the very last minute. And then we go straight in the pan. So it's time to plate it. Every long pasta dish is plated. Very simple, respecting the shape. So we make our lovely bundle and go straight on a plate. And the plate that we have selected is ajinori red, which will match perfectly the color of the pasta itself. And then it's ready. Spaghetti pomodoro.
